Branzi, from raw milk, produced from Bruna Alpina cows

Branzi is truly one of the Italy’s tastiest cheeses; made from raw milk produced from Bruna Alpina cows who graze on the grasses & herbs that grow exclusively in the village of Branzi in Bergamo, Italy at the foothills of the Alps! Packed full of creamy-sweet notes, an initial fruitiness developing into a rich, earthy piquancy! It shares many of the same characteristics of Gruyere, Fontina Val D’Aosta & Taleggio, having excellent melting qualities while offering a superior depth of flavor. Although Branzi is used in a classic recipe melted atop polenta, Branzi’s uses don’t stop there… whether as an exquisite table cheese served with fresh fruit or used to create a luxurious smooth yet extremely flavorful Fondue! This is THE example of classic Italian Alpine cheese at its very best! Aged for 4-6 months, having a compact texture with a straw-yellow paste.
