This is a classic Taleggio cheese made exclusively of pasteurized cow’s milk.  The flavor is sweet, buttery and fragrant with a hint of acidity. This cheese is aged longer than the usual 35 days mandated by the consortium, and with each passing day this aging increases its buttery flavor, rendering it more intense and bringing out the enticing aftertaste. When ripening is complete, the cheeses are subjected to a careful selection process to identify those deserving of being sold under this label indicating the very best of CasA's line.
