This is a typical local cheese, a foundational element of the Lombard-area cheese making tradition. It is doubtlessly one of the world’s most famous cheeses. Of the two, the mild variety is more widely appreciated and preferred. Amazingly soft and creamy, our Gorgonzola is still produced by a company in which human touch makes all the difference.
This cheese is aged on average for at least 60 days, the last part of which is carried out in Valtaleggio itself.
