The inside is very white, characteristic of cheeses produced with buffalo milk. It has an elastic and firm consistency, typical of traditional dairy produce of the Lombardy region. It is matured for over 40 days in CasA cellars and maintains the flavor of buffalo milk, with its crisp and sweet milky notes. With a nod to the more famous buffalo cheeses, this cheese surprises the palate with its freshness and intense flavor.
