Parmigiano Reggiano Ice Cream

Serves 4

Ingredients

2 cups heavy cream

1/2 cup golden sugar or golden brown sugar

1/2 cups ripe strawberries, chopped freshly ground black pepper

1 tbsp. aged balsamic vinegar

  1. In a medium saucepan over medium-high heat, bring cream and sugar to the boil, stirring constantly.

  2. Remove from heat and add the grated cheese, stirring constantly until it is fully melted.

  3. Chill completely, then freeze in an ice cream maker, according to the manufacturers’ directions.

TO SERVE:

Serve ice cream with chopped strawberries, freshly ground black pepper, and a drizzle of balsamic vinegar.
